  1. Salsa rocoto: lavamos y picamos todos los ingredientes en cortes irregulares por separado. En una sartén ponemos aceite, salteamos, el ajo y la cebolla una vez frito agregamos el pimiento y rocoto, salpimentamos, agregamos caldo para que no se nos pegue, cocinamos unos 5 minutos.
  2. Dejamos enfriar luego licuamos y listo tenemos una rica salsa. Para la salsa de tomate es el mismo procedimiento la diferencia que esta lleva tomate.
  3. Ají macho: en la licuadora ponemos el ají cortado ojo con todo y vena, el vinagre, la sal, el ajo al gusto. Licuamos todo que quede bien finito, ponemos en un bowl agregamos el queso picado y la cebolla, listo tenemos para todas las comidas que queramos acompañar.
