- Sal
- Agua caliente (poca, no hirviendo)
- O un paquete de tapa de gyoza
- Masa
- 200 gr cerdo (use bondiola en este caso)
- 2 dientes ajo
- 3 hojas repollo (blanco o morado)
- 1 cuchara jengibre
- 1 cebolla de verdeo (entero)
- 1 pizca sal
- 1 pizca azúcar
- 3 cucharaditas salsa de soja
- Relleno
Instructions to make to make Gyoza de cerdo
- Vamos a cortar el cerdo (en este caso bondiola) en pedacitos lo más chiquito posible (como carne picada) y lo colocamos en un bowl o recipiente
- Cortamos los ajos en pedacitos súper chiquitos (lo más chico posible) y repetimos el corte con la cebolla de verdeo (entero parte verde y blanca) y el repollo. Lo agregamos al recipiente junto con la carne.
- Pelamos el jengibre y lo tallamos sobre la mezcla (si no son de consumir jengibre o es su primera vez reducir la cantidad)
- Agregamos sal
- Añadimos la salsa de soja
- Opcional (solo agrega más cuerpo a la mezcla) agregar una pizca de Maicena o harina de arroz.
- Mezclamos y dejamos reposar en la heladera
- Para la masa: colocamos la harina en un bowl, agregamos sal y mezclamos.
- Agregamos el agua caliente poco a poco (siempre revolviendo para que se incorpore) es importante que quede húmeda la mezcla y no "babosa" así al momento de amasar se forma una bola de masa firme, en caso de haberle puesto mucha agua agregar harina. Una vez agregada el agua amasar hasta formar una bola uniforme
- A la masa le damos forma cilíndrica y cortamos en pedacitos o hacemos bolitas pequeñas
- Estiramos las bolitas lo más finitas posibles.
- También se puede comprar la tapa para gyoza o dumplig ya hecha
- Armado: vamos a agarrar la tapa ya estirada y colocamos relleno en el centro (no muy cargada), con el dedo humedecemos el borde.
- Luego la cerramos a la mitad y apartamos bien el borde
- Y realizamos el repulgue (en mis recetas pueden encontrar la receta de empanadas dónde explico repulgue)
- Para la cocción: en una sartén a fuego bajo colocamos una gota de aceite y esparcimos bien.
- Una vez caliente colocamos las gyozas. Doramos dos lados de la misma.
- Cuando está dorada agregamos un poquito de agua y colocamos la tapa a fuego medio. Dejar cocinar hasta que la masa tome una textura viscosa. (En la foto se ven muchas, pero fueron cocinadas en dos tandas para que no se peguen)
