Una tarta de aprovechamiento, con pollo sobrante de un ensopado, un atado de espinacas y unos restos de quesos. Salió abundante y alcanzó para 2 comidas, una cena y un almuerzo, liviana, nutritiva y deliciosa!!!.

- 1 Atado grande de Espinacas
- 1 Pechuga grande ya cocida
- 100 Grs. Ricotta (o el queso que tengan)
- 1 Cebolla
- 3 Dientes Ajo
- 2 Huevos
- Sal, Pimentón, Adobo, Nuez Moscada y Pimienta Negra (a gusto)
- 150 Grs. Queso Danbo (o cualquier otro que sea fundible)
- Masa:
- 2 y 1/2 Tazas Harina
- 1 Cta. Polvo de Hornear
- 1 Cta. Sal
- 1 Huevo
- 1/2 Taza Soda o agua con gas
- 1/4 Taza Aceite
Instructions to make to make Tarta de Espinaca y Pollo
- Primero vamos a preparar la masa de la tarta (sino utilizan una comprada) para dejarla descansar mientras preparamos el relleno así queda más esponjosa y tierna.
Para ello cernimos los ingredientes secos por un lado y por otro lado batimos los líquidos.
Unimos las dos preparaciones hasta formar una masa suave, sin amasar mucho, hasta que no se pega más a las manos y no necesite más harina y la dejamos descansar. - Lavamos bien la espinaca y separamos las pencas de las hojas.
Las hojas las troceamos un poco si son grandes y las pencas las picamos bien chiquito.
Reservamos. - Picamos chiquito y a gusto la cebolla y dientes de ajo.
En una cacerola salteamos todo en un chorrito de aceite, cuando comience a ablandarse un poco condimentamos con sal, pimentón y adobo a gusto, agregamos las pencas que habíamos reservado bien picaditas y dejamos se cocine todo hasta que ablanden bien. - Luego agregamos las hojas de espinaca troceadas un poco y dejamos se marchiten.
- Agregamos la ricotta y nuez moscada a gusto y mezclamos bien.
Apagamos el fuego y procedemos a desmenuzar el pollo que lo teníamos previamente cocido. - Ahora estiramos la masa con las manos sobre una asadera previamente aceitada hasta cubrir bien el fondo y los laterales.
- Agregamos los dos huevos, el pollo cocido bien desmenuzado y la pimienta negra al relleno una vez enfriado un poco, integramos bien y lo volcamos sobre la masa, esparciéndolo bien hasta cubrir toda la superficie.
- Esparcimos el queso danbo rallado por encima y llevamos a horno precalentado a 180ºC hasta que tome color dorado por los bordes y comprobar esté cocido el piso y listo!!!
